The diagram below shows the process of making chocolate from cacao beans.
PROCESS STEPS:
1. Cacao pods are harvested from cacao trees in tropical regions
2. The pods are split open and the beans are removed
3. Beans are fermented in wooden boxes for 5-7 days
4. Fermented beans are spread out and dried in the sun for about 2 weeks
5. Dried beans are packed into sacks and shipped to chocolate factories
6. At the factory, beans are roasted at 120-150°C for 30-90 minutes
7. Roasted beans are cracked and the outer shells are removed (leaving "nibs")
8. Nibs are ground into a thick paste called "chocolate liquor"
9. Chocolate liquor is pressed to separate cocoa butter from cocoa powder
10. Cocoa butter, cocoa powder, sugar, and milk are mixed together
11. The mixture is heated and stirred continuously for several hours ("conching")
12. The liquid chocolate is poured into moulds and cooled to produce chocolate bars
